Writer’s snack: veg mac and cheese

I love cooking but when I’m busy writing I don’t like to interrupt what I’m doing to make a whole meal. The solution is often sandwiches and ready-made microwavable food. But I’ve also learned quite a few easy and quick recipes that I love sharing. Foremost among them is a vegan mac and cheese that takes only 5 minutes to make.

When I first came across this recipe (can’t remember where) I didn’t think it seemed all that appetising. One of the main ingredients is something called nutritional yeast and that sounds kind of icky. But don’t be fooled by its unflattering name: nutrional yeast can be a delicious addition to many recipes and I make sure to always have it in my pantry.

Nutritional yeast is rich in B vitamins and contains all necessary amino acids.

Here’s the recipe for some delicious vegan mac and ‘cheese’:

Step 1: Start boiling some macaroni.
Step 2: While the macaroni is being cooked, mix in a bowl 1 dl nutritional yeast with some salt and pepper and a tablespoon of olive oil.
Step 3: Once the macaronis are done, take 0.5 dl of the still hot pasta water and add to the ‘cheese’ mix. Add extra olive oil until you get the desired consistency.
Step 4: Pour over the macaroni and mix. Voilà!
